Ingredients
- 500g chicken breast tenderloins or chicken breast fillets cut into strips
- 2 garlic cloves, crushed
- 1 tablespoon ginger, grated
- 3 tablespoons low fat, reduced salt smooth peanut butter
- 2 tablespoons cider vinegar
- ¼ cup salt reduced soy sauce
- 1/3 cup runny honey
- 1 small chilli, de-seeded and finely diced
- ¼ cup lime or lemon juice
- 1 tablespoon lime or lemon zest
- 1 tablespoon cooking oil (olive, peanut, sunflower)
How to make
- Place garlic, ginger, peanut butter, cider vinegar, soy sauce, honey, chilli and citrus juice and zest in the bowl of a food processor and blend until a smooth paste forms.
- Transfer mix to a large bowl and add the chicken strips.
- Allow to marinate for as long as possible (minimum 45 minutes)
- After finished marinating, heat oil in a large frypan and cook chicken strips until the surface is golden and caramelized.
- Thread cooked chicken strips onto skewers and serve.
