Mushrooms and Chicken Salad

Salads do not need to be boring and tasteless, and to prove it we bring you the healthy and tasty recipe for mushrooms and chicken salad, in just 5 steps. Check out how easy it is to make it!

  1. Season both sides of chicken breast with salt and pepper. Saute over medium heat in 2 tablespoons olive oil until golden brown. Once chicken is cool enough to handle, dice it up. Transfer chicken to a medium salad bowl;
  2. Cut mushrooms into large dice. Saute mushrooms over medium/high heat until all of the water is evaporated. Season with salt and pepper to taste until mushrooms are golden brown – remove mushrooms to the salad bowl to cool;
  3. Grate carrots and finely dice onions. Saute in 2 tablespoons olive oil over medium heat, or until softened and golden. Transfer carrots to salad bowl;
  4. Dice some pickles and add them to the salad bowl;
  5. Once all ingredients have cooled to room temp, stir in mayo. Use about 2 flat tablespoons of mayo.

Ingredients

  • 450g chicken breast (about 2 medium or 1 large chicken breast)
  • 350g button mushrooms, cut into large dice
  • 1 large or 2 small carrots
  • 1 small onion, finely diced (1/2 cup)
  • 2 tablespoons Mayo
  • 5-6 Baby dill pickles, finely diced
  • Salt and Pepper to taste
