Chicken Satay: a Healthy Thai dish

Chicken Satay is a traditional Tailandese dish,  super healthy and jam-packed with flavor.  How about taking your loved ones on a trip without ever leaving your dining table? Get ready for the delicious flavors of a fresh Thai classic takeaway dish with a twist.

Ingredients

  • 500g chicken breast tenderloins or chicken breast fillets cut into strips
  • 2 garlic cloves, crushed
  • 1 tablespoon ginger, grated
  • 3 tablespoons low fat, reduced salt smooth peanut butter
  • 2 tablespoons cider vinegar
  • ¼ cup salt reduced soy sauce
  • 1/3 cup runny honey
  • 1 small chilli, de-seeded and finely diced
  • ¼ cup lime or lemon juice
  • 1 tablespoon lime or lemon zest
  • 1 tablespoon cooking oil (olive, peanut, sunflower)

How to make

  1. Place garlic, ginger, peanut butter, cider vinegar, soy sauce, honey, chilli and citrus juice and zest in the bowl of a food processor and blend until a smooth paste forms.
  2. Transfer mix to a large bowl and add the chicken strips.
  3. Allow to marinate for as long as possible (minimum 45 minutes)
  4. After finished marinating, heat oil in a large frypan and cook chicken strips until the surface is golden and caramelized.
  5. Thread cooked chicken strips onto skewers and serve.
